THE PERILS OF REFINED FOODS
If you’ve watched the video Carbohydrates – Surprising Facts, you may recall Dr. Walker stating, “There is not a particle of starch in the constitution of your body. Grains contain the largest concentration of starches, and that is where the problem lies.”
Inventing A Malady
Today, most bread and starchy foods are made from refined flour. In the late 1860s, Hungarian engineers developed the steel roller mill, which crushes grain
and breaks its cell structure to produce white flour. Bakers in Vienna quickly mastered this process, creating the famous Vienna rolls.
The method soon spread to America, where white flour became increasingly processed and more devitalized over time. Before this invention, “white flour” did not exist, flour was whole and retained its natural nutrients.
A Devitalized Civilization
Dr. Walker notes, “What a paradox and what an anomaly that for 4,000 years people used WHOLE GRAIN and when civilization entered a so called period of progress and
enlightenment, nearly every vestige of life was taken out of grains when making flour!”
The outer layers of grains contain essential nutrients like biotin, riboflavin, and nicotinic acid and also the essential fiber. Removing them leads to malnutrition, constipation, and other health issues.
Dr Walker remarks, “To salve their conscience, the millers and manufacturers have added useless products and chemicals to “fortify” the flour and its products. “Refined” white flour is dead. I have never yet heard of a corpse being fortified to convert it into anything but a corpse. It is impossible for man to improve on Nature by removing vital elements from foods and replacing them with manufactured products to fortify or reconstitute them.”
A Host of Ailments
Excessive consumption of refined products has been linked to conditions such as heart dilation, anemia, swollen legs, and paralysis. Refining has increased the occurrence of illnesses like heart trouble, hemorrhoids, cancer and tumors, which occur even among those who consume only whole grains. Many common ailments today were far less prevalent before grain refinement became widespread. When refining was first introduced in Europe and the U.S., physicians strongly opposed it, warning it would harm public health and history has largely proven them right.
In 1997, at 31, Anil Kapur began the Walker Program using Food Combining. He recalls, “I was 22 years old and had acidity for a few days.” I discussed my predicament with our family physician, Dr (Capt.) M. N. Srinivasan. He asked me, are you eating baked foods? Without waiting for an answer, and in the same breath he told me, stop eating baked foods. At that time, all baked goods sold in Bangalore, India, were refined. I stopped eating baked foods, and the acidity soon went away.”
Dr Walker expresses, “Words are inadequate to express the danger of the consumption of baked foods made from devitalized white flour. Such food has no place whatsoever in the diet of ANYONE who aims to attain VIBRANT HEALTH.”
Refined Sugar
This is also a refined concentrated starch. All refined sugars, whether white or brown are a poison, avoid them if you care for your mental and physical wellbeing. This topic will be addressed in another video.
Suggestions
Foods are meant to nourish and cleanse the body; refined foods starve and constipate each time you eat them. Best to eat fruits, salads, cooked vegetables, and whole grains; always avoid refined foods.
Baking involves temperatures above 130°F, which destroy enzymes. If you choose to eat grains, opt for whole grains without preservatives. Occasionally consuming small amounts of whole-grain bread may not do much harm, but include raw vegetables with your meal. A healthier option is to soak whole grains in warm water (around 125°F) overnight without boiling. Once softened, they can be eaten with or without honey, but never with refined sugar. Adding sprouted microgreens can further enhance nutritional value.
